Baked Barramundi with South Asian Spices

INGREDIENTS

100g Muhudu Modha
2 tbsp Yoghurt
1 tbsp Coriander Leaves
1 1/2 tbsp Grated Ginger
2 cloves of Garlic
3 Green Chillies
1 tbsp Turmeric Powder
1 tbsp Pepper
1 tbsp Salt
1 Lime
Curry Leaves and Rampe
1 tbsp Chilli Powder
1 Potato
1 Tomato
1/2 Cup Water
1 1/2 Cups of Coconut Milk
1 Banana Leaf

METHOD

Step 1
Cut the Barramundi filet into two pieces. Prepare a bowl to marinate the fish. Add Yoghurt, Coriander Leaves, Grated Ginger, Green Chili, Garlic, Turmeric Powder, Pepper, Salt & Lime Juice, and mix well. Place the fish in the bowl and spread on both sides and marinate for 10 minutes.

Step 2
Place the fillets on a Banana Leaf and bake for 25 min and Voila! Serve with steamed rice.
